| Food scientist, born in New York City, New York, USA. He taught food engineering at the Massachusetts Institute of Technology (1965–71), his alma mater, before joining the Food Science and Nutrition Department at the University of Minnesota (1971). He wrote 12 textbooks and many articles, and edited the Journal of Food Processing and Preservation (1976–84). During the Desert Storm campaign, he worked for the Department of Defence task force on food quality problems associated with a hot environment. |
