| biography:
| Agricultural chemist and originator of scientific dairying, born near Bridgewater, New York, USA. He studied at Tufts College, Cornell, and Göttingen, and taught agricultural chemistry at Wisconsin University (1887–1913). He devised the Babcock test for measuring fat in milk (1890), which much improved the quality of dairy produce. He also helped develop the process of cold curing of cheese (1900), and his experiments led to studies that developed the vitamin concept. He is known as ‘the father of scientific dairying’. |
