| Home economist and educator, born in Hope, Michigan, USA. She entered the University of Chicago at age 36, earning a PhD and becoming professor of home economics there (1919–44). Author of the classic Nutrition Work with Children (1927), she specialized in children's and community nutrition and nutrition education, developed standards for dietary requirements, and lobbied for vitamin enrichment of flour and bread. |
