| Nutritionist and educator, born in Philadelphia, Pennsylvania, USA. She studied at the University of Chicago (PhD), and while on the faculty there (1913–29) she developed a home economics curriculum and conducted important research on the role of ultraviolet light and vitamin D in nutrition. As president of Connecticut College for Women (1929–43), she strengthened the college academically and extended the curriculum to include politics, economics, and business. |
